Al Kippax, owner of Malton based, Bluebird Bakery, tells us why he started his baking business in York.
After moving from London with the intention of starting a catering business, Al found that there were already too many businesses already filling that niche – he needed to come up with a different concept.
After driving round York one morning, he hit on the idea of setting up his own baking business. He already knew that he wanted to focus on sourdough bread, and researched ’til he found the perfect three-day baking course in Scotland. He says that, after finishing the course, he went home and just practised for six months.
Since then, he’s opened a bakery and shop in Malton; as well as a shop in The Shambles, York.
When asked who his first customers were, Al replied, “they were wholesalers, I just did a few bakes and took my products round to them.” The Good Food Shop on Bishopthorpe Road was one of them and Al’s market stall in Newgate/Shambles Market in central York also helped to build The Bluebird Bakery’s customer base.
The business started life as a micro-bakery, producing sourdough bread and a few brownies, ‘because they don’t take too much time’. Since then, Al has moved to Malton and found (baking) premises. He has also found time to employ staff to help with baking and selling: Jose and Krysztof in Malton; as well as Helen, Laura and Jade in the Malton shop, and Jacqui and Lucy in York.

Asked about his plans for the future, Al replied, “we’re always thinking up new things, new breads …new products”.
The Bluebird Bakery products are all available from the above-mentioned outlets (the number is growing all the time), as well as the bakery’s own shops at 2 Little Shambles in York and Talbot Yard in Malton.
